Black Bean Stuffed Sweet Potatoes


I love sweet potatoes. Why? They’re loaded with good-for-you antioxidants and complex carbohydrates.

Sweet potatoes contain beta-carotene, a powerful antioxidant that converts to Vitamin A in your body. Vitamin A helps maintain healthy skin, vision and a strong immune system, which is your body’s natural defence against illness.


Since Vitamin A is a fat-soluble vitamin, the avocado (fat) in this recipe will help increase your absorption.

The complex carbohydrates also provide lasting fuel for those busy afternoons. Remember, carbs provide glucose, which is our body’s primary source of fuel.

Finally, sweet potatoes make a great base for delicious, colourful toppings! This recipe is delicious, versatile and easy.

TIME: 45 MINUTES
YIELDS: 2 SERVINGS

Ingredients

  • 2 sweet potatoes

  • 1 can black beans, drained

  • 1/2 white onion, diced

  • 1 tbsp garlic powder

  • 1 tbsp cumin

  • 1 tbsp chili powder

For toppings:

  • 1/2 avocado, diced (or guacamole)

  • 1/2 tomato diced (or salsa)

  • 1/2 cup cilantro

Directions

  1. Preheat oven to 400 F. Using a fork, poke holes in the sweet potatoes. Place them in the oven for 40-45 minutes, until cooked through.

  2. In a medium heat pan, add beans, onion, garlic powder, cumin, and chili powder. Cook for 6-7 minutes, stirring frequently. Use your spatula to “mash” some of the beans.

  3. Once the sweet potatoes are ready, remove from the oven. Cut them lengthwise. Fill with the avocado, tomatoes and cilantro. Add more toppings/sauces as desired.

  4. Enjoy!

**Recipe modifications:

⦿ Feel free to swap out the black beans for alternative proteins. Roasted chickpeas work great in this dish!

⦿ If you have PCOS, you may also want to try swapping out the beans for scrambled tofu, ground turkey or ground beef!

⦿ Play around with the toppings. Mix and match vegetables, add salsa, top with melted cheese. Add a scoop of Greek yogurt for more protein.

⦿ Add a drizzle of sauce of extra flavour. I like to drown mine in hot sauce.

⦿ Got a BBQ? Wrap your sweet potato in aluminum foil. Place on grill and let it bake for 40 minutes.
